Couscous Salad

This light salad can be prepared in less than 10 minutes and it’s equally good eaten at home and packed for a day out at the beach.

Serves: 2

All you will need is:

Lamb Brand Couscous, 100g

Lamb Brand Pine Nuts, 2 tbsp.

Lamb Brand Parsley, 1tbsp

Vita Natura Dried Apricots, 50g

Hot low salt vegetable stock / water, 200ml

Spring onions, 2

Garlic cloves, 2

Extra virgin olive oil, 2 tbsp.

Lemon juice, 2 tbsp.

Cherry tomatoes, 6 / Red pepper, 1

Cucumber, ½

Feta cheese, cubed, 50g [optional]

All you have to do is:

  1. Tip couscous into a large bowl and pour over the hot stock or water. 
  2. Cover, then leave for 10 minutes, until fluffy and all the stock has been absorbed. 
  3. Meanwhile, slice the onions, chop the garlic, herbs, tomatoes or pepper, and apricots, and dice the cucumber. 
  4. Add these to the couscous, fork through olive oil and lemon juice, crumble in feta (if using), then sprinkle over nuts or seeds to serve.
