Try out this pork fillet with a hint of cinnamon spice and fruity compote. It's awsome.
You will need:
For the compote
Lamb Brand Dried Prunes 4
Lamb Brand Sultanas 2 tbsp
Spring Onions 2
Green Apple 1
Orange 1
Knob butter 1
Honey 1 tsp
Sweet Wine 1/5 glass
Small Bunch Coriander
For the pork
Lamb Brand Cinnamon 3 tsp
Lamb Brand Paprika 1 tsp
Cranberry Jelly 2 tbsp
Fillet of Pork 1
Large Potato 1
Knob Butter
All you have to do is:
Chop the spring onion and dice the apple, sauté in butter for 1 minute, add the diced prunes, sultanas and toss. Once softened add the honey, caramelize and add the red wine and orange segment, reduce remove from heat drizzle on the sliced pork and sprinkle with coriander leaves. Mix well the paprika, cinnamon, cranberry and brush well the pork from all sides, heat well a griddle pan and seal well from all side and finish in the oven. Dice the potatoes boil and mash with the butter season and serve underneath the pork.
