These tuna and quinoa are so delicious, healthy and easy to make! These tortilla wraps are packed with high-quality protein thanks to the quinoa.
Bring the wraps to work or school for lunch, or enjoy them for dinner.
You will need:
Lamb Brand Durum Wholemeal Tortillas 4 (You can also use wholegrain tortillas)
Lamb Brand Quinoa 1 cup, prepared
Lamb Brand White Beans 1 cup, prepared, rinsed and drained
Lamb Brand Table Salt, to taste
Lamb Brand Black Pepper, to taste
Canned Tuna in Brine 2, drained
Onion 2 tbsp, diced
Fresh Mint 2 tbsp, chopped
Fresh Baby Spinach, 1 cup
Cherry Tomatoes ½ cup, halved
Greek Yoghurt ½ cup
Fresh Lemon Juice
All you have to do is:
1. In a medium bowl, combine tuna, quinoa, white beans, diced onion, tomatoes and mint.
2. Add the Greek yoghurt, some fresh lemon juice and stir to combine. Season with salt and pepper to taste.
3. To assemble: Place ¾ cup of mixture into each tortilla. Top the mixture with ¼ cup fresh spinach and roll the tortilla into a wrap.
4. Repeat for each tortilla. Serve.
