Delicious spaghetti with cherry tomatoes and tuna, make this meal simple, quick and tasty.
You will need:
Che Pasta spaghetti, 500g
Lamb Brand breadcrumbs, 1 cup
Olive oil, 2 tbsp.
Flat-leaf parsley leaves, 1/3 cup chopped
Canned Tuna, 425g (drained, flaked)
Cherry tomatoes, 200g (quatered)
Grated parmesan cheese, ½ cup
Lemon juice, 1/3cup
All you have to do is:
1.Cook pasta in a saucepan of boiling salted water, following packet directions, until just tender.
2.Meanwhile, heat oil in a frying pan over medium-low heat. Add breadcrumbs.
3.Cook for 10 minutes, stirring occasionally, or until golden and crisp. Remove from heat. Transfer to a bowl. Add parsley. Toss until well combined.
4.Drain pasta. Return to saucepan. Add tuna, tomatoes, parmesan and lemon juice. Toss over low heat for 3 minutes or until just heated through.
5.Spoon into serving bowls. Sprinkle with breadcrumb mixture.
6.Season with salt and pepper. Serve.
