Caprese Wraps with Chicken

Cooked chicken last night and still have some left overs?  Turn your chicken into a hearty healthy lunch with our tasty wraps for a quick and easy meal. 

You will need:

Lamb Brand Wholemeal Durum Flour Tortillas 4

Lamb Brand Salt 1/4 tsp

Lamb Brand Black Pepper 1/4 tsp

Chopped Romaine Lettuce 4 cups

Olive Oil 2 tbsp

White Wine Vinegar 2 tbsp

Cooked Chicken Breast 1 1/2 cups, shredded

Cherry Tomatoes 1 pint, quartered

Large Garlic Clove 1, halved

Fresh Mozzarella Cheese 3/4cup, chopped

Fresh Basil Leaves 1/2 cups, torn

Cooking Spray

All you have to do is:

1. Combine olive oil, white wine vinegar, salt and pepper in a large bowl, stirring with a whisk. Add lettuce, shredded chicken breast, mozzarella cheese, basil leaves and tomatoes, tossing to coat.

2. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Working with 1 tortilla at a time, cook tortilla for 1 minute on each side or until toasted. Rub 1 side of each tortilla with cut sides of garlic. Arrange 1 1/2 cups chicken mixture in the center of each tortilla; roll up.
