Pizza Rustica

If you’re a fan of mixing the traditional with a more modern twist then you will love this pizza rustica. Ideal as a main meal or an appetiser, this recipe makes for a fun movie night treat for all the family.

Makes 1 pizza and serves 2 portions 
Preparation and Cooking time: Approx 60 minutes

For Dough:

Lamb Brand Deep Pan Pizza Mix 250g

Water 125ml, warm

Olive Oil 10ml

For Filling:

Lamb Brand Sesame Seeds 2 tbsp

Lamb Brand Ground Black Pepper to taste

Lamb Brand Table Salt to taste

Turkey Ham 12 slices

Gruyère Cheese 12 slices

Ricotta 200g

Fresh Spinach 80g

Extra Virgin Olive Oil 2 tbsp

For Dough: Sift mixture into a bowl and add oil and water. Work dough with your hands until a smooth dough is obtained. Shape into a ball and leave to rest for 10 minutes in a warm area, covered with a table cloth. Roll out on a floured working top, leaving it approximately 7mm thick then put in a greased round pan and leave to rest in a warm place for another 20 minutes.

Making Pizza Rustica: Brush olive oil on top of the dough, place slices of the turkey ham followed by layers of the sliced gruyère cheese. Mix the ricotta and the roughly chopped raw spinach leaves and spread all over. Gather sides of dough to cover a quarter of the filling. Sprinkle some salt and pepper to taste, a drizzle of extra virgin olive oil and sesame seeds. Bake in a 220°C preheated oven for 15 minutes. Slice, serve and enjoy!
