A tasty delicious one pot curried chicken rice pilaf, apart the goodness in this meal it also keeps the washing-up down to an absolute one-pot. You can even eat it out of the cooking dish!
You will need:
Lamb Brand Long Grain Rice 2 cups
Lamb Brand Sultanas 1 handful
Lamb Brand Roasted Almonds, crushed
Lamb Brand Curry Powder 2tsp
Lamb Brand Paprika 1 tsp
Lamb Brand Table Salt, to season
Lamb Brand Pepper, to season
Chicken Tights 6
Chicken Stock 6 cups
Carrots 2, peeled and sliced
Cauliflower 1
Red Bell Pepper 1
Vegetable Oil 1 tbsp
Onion 1, finely sliced
All you have to do:
Skin off the chicken thighs and debone, slice if too big. Season the chicken pieces and seal in hot oil until browned. Remove from pan, add the onion and cook until soft, stir in the rice and toast slightly. Add the chicken pieces, curry powder and paprika and cook for further 2 minutes. Pour in the chicken stock and bring to the boil. Remove from the heat, stir in the vegetables, cover the pot with a lid and finish cooking in a hot oven for 20 minutes. Serve sprinkled with sultanas and nuts.
