Cranberry Popcorn

A funky twist to popcorn! Kids will love it!

Makes 6 servings:

 

You will need:

Hello Cranberry Juice 1/4 cup

Lamb Brand Corn 12 cups, popped

Lamb Brand White Granulated Sugar  1 cup

Lamb Brand Dried Cranberries 1 cup

Butter 1/2 stick

Light Corn Syrup 1/4 cup

Honey 1/4 cup

 

 

 

 

 

 

All you have to do is:

1. Preheat oven to 165ºC.

2. In a small saucepan, melt butter over low heat. Stir in sugar, corn syrup, honey and cranberry blend juice.

3. Bring to a boil, stirring constantly. Lower heat and simmer until mixture reaches 105ºC on a candy thermometer.

4. Place popcorn and dried cranberries in a large bowl. Pour syrup over popcorn; stir until well coated.

5. Spread popcorn evenly in a large roasting pan. Bake for about 5 minutes, stirring once or twice, until mixture just begins to turn lightly brown.

6. Remove from oven; let cool to room temperature, about 15 minutes. Store in an airtight container for up to 1 week or roll into popcorn balls.

7. Re-crisp in a preheated 175ºC oven for a few minutes, if necessary.
