Orange Nut Muffins

These are the best orange muffins! If you give these a try, you will not be sorry! 

Substitute walnuts with peacans. Enjoy!

You will need:

HELLO 100% Orange Juice 1/3 cup, frozen and thawed

Lamb Brand Plain Flour 400g

Lamb Brand White Granulated Sugar 120g

Lamb Brand Walnuts 80g, chopped

Lamb Brand Bicarbonate of Soda 1 tsp

Lamb Brand Baking Powder 1/8 tsp

Lamb Brand Table Salt 1/8 tsp

 

For the Orange Glaze:

HELLO 100% Orange Juice 3 tbsp

Lamb Brand Icing Sugar 120g

 

All you have to do is:

1. In a large bowl, combine flour, granulated sugar, bicarbonate soda, baking powder and salt. 

2. Make a well in the centre of flour mixture.

3. In medium bowl, combine egg, buttermilk, orange juice and melted butter; add all at once to flour mixture. 

4. Stir just until moistened (batter should be lumpy) and fold in the walnuts.

5. Line twelve 2-1/2-inch muffin cups with paper bake cups. 

6. Fill the cups 3/4 full with batter. 

7. Bake in a 400 degree F. oven for 18 to 20 minutes or until muffins are golden. Remove the muffins from the pans.

8. In a small bowl, combine the icing sugar, and enough orange juice to make a drizzling consistency. 

9. Drizzle over warm muffins.

10. Serve and enjoy.
