A rabbit recipe with a difference. Apple and prune stuffed rabbit loin with a spicy honey and orange sauce.

For the Rabbit
Lamb Brand Dried Prunes 6 chopped
Rabbit Saddle 1 Whole de-Boned
Dried Apples 50g chopped
Back Bacon 8 thin slices
You will also need
Lamb Brand Polenta 100g
Lamb Brand Thyme 1 tsp
Chevrette Goat’s Cheese 2 slices
Fresh Parsley 1 tsp, chopped
Salted Butter 1 knob
Spring Onion 1
Honey 1 tsp
Red Chilli ½
Fresh Orange Juice ¼ cup
Small bunch Kale
All you have to do is:
Chop the apples and prune and mix together, put the mixture in the middle of the saddle and roll.
Cover with bacon on the outside and bake at 180`c until cooked through.
Melt the butter on low heat and sauté the chopped spring onion and chilli without browning, add the honey and caramelize.
Now pour in the orange, thyme and simmer than remove from heat.
Cook the polenta as per packet instructions, mix in the chopped cheese parsley, place in a mould and allow to set.
Sauté the kale in garlic oil and serve straight away.
