Marinated Fillet of Beef on a glazed Carrot and Apple Salad

A good marinade will help out virtually any cut of beef. Try out this marinate, you will surely try this again!

You will need:

Lamb Brand Brown Sugar 2 tsp

Lamb Brand Sesame Seeds 1 tbsp

Lamb Brand Hot Chilli Flakes 1 tsp

Beef Fillet 500g

Skewers 4

Soy Sauce 3 tbsp

Pitta Bread 2

Hoisin Sauce 2 tbsp

Coriander 2 tbsp, roughly chopped

Spring Onion 1, chopped

Brown Beer 1/4 glass

 

For the salad:

Lamb Brand Brown Sugar 2 tbsp

Lamb Brand Flaked almonds 1 tbsp

Butter 50g

Plain Yoghurt 4 tbsp

Large Carrots 2

Green Apple 1

Pesto Genovese 1 tbsp

All you have to do:

1. Cut the beef in cubes and mix well in a bowl with all the other ingredients, allow to rest for 2 hours and than put the beef into the skewers.

2. Preheat well a griddle pan and grill the beef to medium, remove and simmer some of the left marinade to glaze the beef with.

3. Grill the pitta, quarter and serve on the side.

4. To prepare the salad, cut the carrots in fingers and place on an over tray, melt the butter and drizzle on the carrots.

5. Sprinkle the sugar on and bake until browned.

6. Mix the pesto with the yogurt in a bowl.

7. Slice the apple and mix with yogurt.

8. Roast the almond crush and mix with the apples.

9. Once carrots are cooked allow to cool and serve with at apples on top.
