Involtini are stuffed and rolled bundles, traditionally made from slices of meat, fish or vegetables. Fill them out with ham and cheese and cover them in breadcrumbs and you will see that guests will ask you for more!
You will need:
For the involtini
Lamb Brand Bread Crumbs
Lamb Brand Pine Nuts Taleggio cheese 200g
Smoked Ham 8 slices
Milk Fed Veal 8 slices
Zest of a lemon
Fresh Sage
Chopped Parsely
Parmesan Cheese, grated
You will also need
Lamb Brand Pine Nuts
Lamb Brand White Granulated Sugar 1 tbsp
Lamb Brand Dried Oregano ½ tsp
Zucchini 2, cut in chunks
Onions medium sized 2, peeled and cut in wedges
Garlic Cloves 2
Tomato Pulp 1 can
Fresh Chilli 1
Vinegar 1 tbsp
Olive Oil
Rocket leaves
Grana shavings
Fresh seasoning
All you have to do is:
1. Season the breadcrumbs with salt, pepper, grated Parmesan, chopped parsley and lemon zest.
2. Press the veal slices on one side onto the bread crumb mixture and place flat, bread crumbs down on a chopping board.
3. Put a slice of ham on each slice of meat, taleggio cheese and pine nuts.
4. Roll the meat, making sure to secure the filling inside.
5. Take a skewer long enough and place 4 involtini on each one.
6. Grill the Involtini until bread crumbs is golden and crispy.
7. To prepare the zucchini, pour a generous serving of olive oil into a frying pan and heat gently.
8. Add the onion, garlic and zucchini and fry slightly.
9. Sprinkle with the oregano, add the vinegar, sugar and chilli.
10. Allow reduction for a few minutes, stir in the cherry tomatoes and enough tomato pulp to make a nice rich thick sauce that binds all the ingredients.
11. Cook for further few more minutes.
12. Serve the involtini accompanied with the zucchini, rocket leaves, cheese and olive oil.
