A healthy meal, which is packed full of delicious flavours and textures. Bulgur wheat is baked with green pepper, beef mince and aubergines in a well-seasoned tomato sauce.
Serves 4
You will need:
Lamb Brand Bulgur Wheat 140g
Lamb Brand Ground Black Pepper, to taste
Lamb Brand Fine Table Salt, to taste
Lean Minced Beef 500g
Tomato Puree 125g
Water 125ml
Parsley 4 tbsp, chopped
Tomatoes 3, skinned and sliced
Garlic cloves 3, crushed
Aubergines 2, sliced 5mm thick
Onion 1, chopped
Green Pepper 1, chopped
Olive Oil 1 tbsp
All you have to do is:
1. Preheat oven to 180 C / Gas 4.
2. Sprinkle aubergine slices with salt. Set aside.
3. Mix the beef with onion, parsley and salt and pepper to taste. Set aside.
4. Place the tomato puree, garlic, 125ml water and olive oil in a small saucepan.
5. Bring to the boil and boil for 5 minutes.
6. Rinse the aubergines and place a layer on the bottom of the dish. Pour over 1/3 of the tomato sauce. Arrange sliced tomatoes on top.
7. Pour bulgur into the dish and cover with the beef mix.
8. Arrange green pepper on top (if using), then cover with another layer of aubergines.
9. Add the remaining tomato sauce. Cover with foil and bake in preheated oven for 1 1/2 hours.
10. Remove foil and cook for another 1/2 hour.
