Lentil Burgers

Who doesn’t love burgers? Try these Lentil Burgers, using a variety of Lamb Brand products. This recipe can also be served on salads or in a bun.

All you will need is:

Lamb Brand Lentils Mix, 400g

Lamb Brand Breadcrumbs, 200g

Lamb Brand Ginger Ground, 1 tbs

Lamb Brand Ground Coriander, 4 tsp

Lamb Brand Ground Cumin, 2 tsp

Lamb Brand Curry Powder, 2 tsp

Garlic Cloves, 2 crushed

Eggs, 2 lightly beaten

Carrot, 1 medium grated

Onion, 1 medium finely chopped

Celery, 1 stick finely chopped

Vegetable Stock Cube, 1

Olive Oil, 2 tbs

All you have to do is:

  1. Add lentils to pan of boiling water and boil uncovered for about 8 minutes or until tender. Drain and squeeze excess liquid from lentils. Process half the lentils until smooth, reserve remaining lentils. 
  2. Heat oil in pan, add onion, ginger and garlic, cook stirring until carrot is soft. Combine lentil puree, reserved lentils, carrot mixture, and 130g of breadcrumbs in a bowl and mix well. 
  3. Divide mixture into 8 burgers, toss in a little flour, dip into eggs and combine with remaining breadcrumbs. 
  4. Shallow-fry burgers in hot oil until browned. Drain on absorbent paper and serve with roasted onion salad.
