Quinoa Salad with Curry

This Quinoa Salad is great as a side dish for supper or a main course for lunch, this salad gets its fresh taste and pretty colour from curry powder and the mix of ingredients that blend well all together.

You will need:

Lamb Brand White Quinoa 400g

Lamb Brand Red Almonds 150g

Lamb Brand Sultanas 125g

Lamb Brand Curry Powder 2 tsp

Lamb Brand Cinnamon 1 tsp

Lamb Brand Ground Cumin 1 tsp

Lamb Brand Salt

Lamb Brand Black Pepper

Fiamma Chickpeas 400g

Tomatoes 2

Green Apple 1

Lemon Juice 1 tbsp

Olive Oil

All you have to do is:

1. Boil the quinoa with salt and curry for 15 minutes, or according to the packaging instructions.

2. Chop the almonds coarsely and roast them in a dry pan.

3. Cut the apples and tomatoes into small pieces. The tomatoes should be very small and deseeded.

4. Rinse the chickpeas, add lemon juice and season them with salt, pepper and cumin. Stir gently.

5. Roast the sultanas on a clean pan and add the cinnamon.

6. Allow all the ingredients to cool down and combine all together.
