Crunchy on the outside and soft on the inside, this simple yet delicious pizza is the ideal nibbler for any party. Apart from being ideal for vegetarians it also carries less calories than other pizzas, making it suitable for those of you who want a lower calorie intake.
Makes 1 pizza and serves 2 portions
Preparation and Cooking time: Approx 55 minutes
For Dough:
Lamb Brand Deep Pan Pizza Mix 250g
Water 125ml, warm
Olive Oil 10ml
For Topping:
Lamb Brand Basil 1 tbsp
Lamb Brand Ground Black Pepper to taste
Lamb Brand Table Salt to taste
Feta Cheese 200g
Aubergines 1, sliced
Onion 1, large sliced into rings
Red Bell Pepper 1, large sliced into rings
Extra Virgin Olive Oil 2 tbsp
Pizza Dough: Sift mixture into a bowl and add oil and water. Work dough with your hands until a smooth dough is obtained. Shape into a ball and leave to rest for 10 minutes in a warm area, covered with a table cloth. Roll out on a floured working top, leaving it approximately 7mm thick. Put in a greased pizza pan of your choice and leave to rest in a warm place for another 20 minutes.
Making My Veggy Pizza: In a griddle, heat 1 tbsp of olive oil over a high heat and sauté the aubergines, onion and red pepper. Brush olive oil on top of the dough, cover with the sauteed aubergines, onions, red pepper rings and spread the creamy feta cheese. Sprinkle salt and pepper to your liking. Then sprinkle the basil and a drizzle of olive oil. Bake in a 220°C preheated oven for 15 minutes.
