Three Bean Patties

This three bean recipe takes on tradition with a twist by adding banana and beans as a meat replacement for a healthier alternative. These two ingredients bring you a healthier exotic approach to the more traditional patties.

Serves 4 to 6

Lamb Brand Cannellini Beans 200g

Lamb Brand Red Kidney Beans 200g

Lamb Brand Chickpeas 200g

Lamb Brand Table Salt for tasting

Lamb Brand Ground Black Pepper for tasting

Il Molino Chickpea Flour 2 tbs

Onion 1 large

Banana 1 large

Garlic 1 clove

Lemon squeezed juice of 1/2 lemon

Paprika 2 tsp

Egg 2, 1 whole 1 white

Fresh Chives 2 tbs, chopped

Fresh Parsley 2 tbs, chopped

Butter 2 tbsp

Vegetable Oil for frying

You can add 150g bacon to enhance this recipe.

 

Soak beans in separate containers for a minimum of 5 hours (changing fresh water every hour if possible). Mix all beans in one pan on high heat, bring to boil, reduce heat and cook until tender. Drain beans, mash and leave to rest. In the meantime peel and chop the onion and garlic and cook in a pan with the vegetable oil. Peel the banana, slice it into small cubes and add to frying pan. Once tender remove from heat and add to the beans mixture.

Remove unwanted fat from the bacon and slice. Cook bacon in the hot frying pan on medium heat. When ready drain on a kitchen paper to absorb extra oil and add to the bean mixture and mix well.

Add in remaining ingredients except butter and mix well. Leave to rest in the fridge for around half an hour so that mixture will dry up and bond better. Shape into patties, and rub into some chickpea flour before frying in a mixture of oil and butter and fry for around 4 minutes on each side until golden brown. You can serve these patties as a meal, on salads or to replace any hamburger snack
