Preparation and Cooking time: Approx 90 minutes
For Dough:
Lamb Brand Wholemeal Flour 400g
Lamb Brand Auntie’s Mix 200g
Lamb Brand Table Salt 1 tsp
Warm Water 1 cup
Yeast 2 tsp
Sugar 1 tsp
Olive Oil 2 tbsp
For Hummus Filling:
Lamb Brand Chickpeas 200g
Lamb Brand Ground Black Pepper to taste
Lamb Brand Table Salt 1 tsp
Tahini 1 tbsp
Garlic 2 cloves
Olive Oil 4 tbsp
Lemon Juice 2 tbsp
For Dough: Mix the yeast and warm water together; wait until foam forms. Add the sifted flour, together with the rest of the ingredients and mix well, until the mixture resembles breadcrumbs. Add a little more flour and form the mixture into a dough. Cover in cling film and let rest for 10 minutes, for the dough to rise. Batter the dough with your fists and split in 2. Spread the dough in a dish, that is already covered in oil so it doesn’t stick. Bake in a preheated oven of about 220ºC for about 20 minutes.
For Hummus Filling: Soak the chickpeas for a minimum of 5 hours or overnight, changing the water from time to time. Rinse, add to small pot, cover with water and cook over a medium heat for about 30 minutes. Drain the chickpeas, keep a quarter cup of the cooking water on the side, and let them cool down. Using a food processer, crush the garlic. Add the chickpeas, tahini and lemon juice and blend together. Add the olive oil, and then add the water little by little until a creamy but thick substance is obtained. Add more water should the texture need it.
For the Pizza: Spread the hummus paste over the cooked base and add your favorite ingredients such as ricotta, fresh tomatoes or sundried, olives, capers etc. Serve when still warm or reheat for a few minutes just before serving.
