Vegetarian Bolognese Sauce

Preparation & Cooking Time: 60 minutes

This sauce is based on the traditional bolognese recipe with a slight twist in the ingredients. Lentils are used as a subtitute for meat, making it more nutritious and suitable for vegetarians. Surely an ideal healthy recipe that all your family will love.

You will need:

Lamb Brand Green Lentils 200g

Lamb Brand Oregano ?tsp

Lamb Brand Basil ?tsp

Lamb Brand Ground Black Pepper to taste

Lamb Brand Fine Table Salt to taste

Prime Luci Pasta Spaghetti 500g

Water 800ml

Tomato sauce 236ml

Tomato paste 177ml

Onion 160g, chopped

Mushrooms 140g, sliced

Olive Oil 10ml

Zucchini 1 small, chopped

Carrot 1 medium, grated

Garlic 3 cloves, minced

All you have to do is:

In a large saucepan, heat oil over medium heat. Add onions, mushroom, zucchini and garlic. Cook and stir until tender, about 5 minutes.

Add lentils, grated carrot and 700ml of water to vegetables in saucepan. Bring to a rolling boil, stirring occasionally. Reduce heat to low, cover and cook for about 35 minutes, until lentils are just tender.

Stir in tomato sauce, tomato paste and the remaining100ml of water. Bring to a boil. Reduce heat, season with salt and pepper, oregano and basil, cover and simmer for another 20 minutes. If necessary, add more water to keep the sauce from sticking. Be careful not to dilute; the sauce should be quite thick.

In the meantime cook pasta in salted boiling water. Once cooked mix well with the sauce and serve warm.
