This recipe is an ideal dish for vegetarians. Ths Mixed Green Pilaf is quick, easy, and really delicious.
You will need:
Lamb Brand Minestra Mediterrania 400g
Lamb Brand Raisins 200g
Lamb Brand Whole Grain Rice 70g
Lamb Brand Basmati Rice 70g
Lamb Brand Red Lentils 50g
Lamb Brand Cinnamon Sticks 5cm piece
Lamb Brand Ground Turmeric ½ tsp
Lamb Brand Table Salt to taste
Lamb Brand Ground Black Pepper to taste
Vegetable Stock 300ml
Tomatoes 200g, chopped
Butter 15g
Eggs 4
Freshly Chopped Herbs 4 tbsp (parsley & basil)
Olive Oil 2 tbsp
Garlic Clove 1, peeled & crushed
Bunch Spring Onions 1, trimmed & finely sliced
Spring of Fresh Dill, to garnish
Method:
1. Heat 1 tablespoon of oil in a saucepan. Add the garlic and turmeric and cook for a few seconds. Stir in the rice and lentils.
2. Add the stock, tomatoes and cinnamon. Season to taste with salt & pepper.
3. Stir once and bring to the boil. Lower the heat cover and simmer for 20 minutes, until most of the stock is absorbed and the rice and lentils are tender.
4. Stir in the beans; replace the lid and leave to stand for 2-3 minutes to allow the beans to heat through.
5. While the rice is cooking, heat the remaining oil and butter in a frying pan.
6. Add the spring onions and cook for 4-5 minutes, until soft. Lightly beat the eggs with 2 tablespoons of the herbs, and then season with salt & pepper.
7. Pour the egg mixture over the spring onions. Stir gently with a spatula over a low heat, drawing the mixture from the sides to the center as the omelette sets.
8. When almost set, stop stirring and cook for about 30 seconds until golden underneath.
9. Remove the omelette from the pan, roll up and slice into thin strips.
10. Fluff the rice up with a fork and remove the cinnamon stick.
11. Spoon onto serving plates, top with strips of omelette and the remaining chopped herbs.
12. Garnish with springs of dill and serve.
