Preparation & Cooking Time: 30 minutes
Serves: 4
You will need:
Lamb Brand Che’ Pasta Penne Rigate 500g
Lamb Brand Yellow Split Peas 100g
Lamb Brand Green Split Peas 100g
Lamb Brand Pine Nuts 15g, toasted
Lamb Brand Table Salt to taste
Lamb Brand Ground Black Pepper to taste
Fresh Cream 750ml
Mushrooms 3 big, sliced
Carrots 2, sliced
Marrows 2, sliced
Leek 1, sliced
Olive Oil 3tbsp
Butter 1tbsp
All you have to do is:
Rinse the green peas under running water. In small separate pots add peas, cover with water and cook on medium heat till peas become a little soft. From time to time you might need to add hot water so as to prevent the peas from drying. (Pre-soaking peas will reduce the cooking time considerably) When ready drain them and let cool.
Meanwhile, bring a large pot with lightly salted water to a boil, stir in penne.
Cook pasta uncovered, stirring occasionally, until cooked through but still slightly firm to the bite, about 9 minutes.
While waiting for the pasta to be cooked, prepare the sauce.
In a large frying pan heat the oil and butter and fry the leek. Add the carrots and continue frying. Stir in the mushrooms and marrows and fry for another few minutes, season with some salt and pepper to taste. Add fresh cream and continue cooking until the cream starts getting a little thick. Take the pan off the heat.
Add the split peas and toasted pine nuts and mix well.
Drain the pasta well and add to the sauce, mix well together and cook for another 2 minutes, so that the pasta will absorb all the flavours of the creamy sauce.
Serve warm with some grated cheese.
