These veggie patties are made of a delicious combination of kidney beans, sweet potato and oats, then coated with breadcrumbs.

You will need:
Lamb Brand Red Kidney Beans 125g
Lamb Brand Oats 100g
Lamb Brand Breadcrumbs 2 tbsp and more for dipping
Lamb Brand Chilli Flakes ½ tsp
Lamb Brand Black Pepper 1 tsp
Lamb Brand Salt
Sweet Potato 350g
Roasted Spring Onions 50g
Olive Oil 1 tsp
For the condiments:
Avocados 2, sliced
Tomatoes 2, sliced
Baby Potatoes 1kg
Green Lime 1
Onion 1, caramelized
Baby Lettuce Burger Buns, whole grain
Fresh Coriander

You will need:
1. Set the oven to 200C. Peel and cut the sweet potato into chunks. Put the sweet potato in a pot, cover with water and bring to a boil. Boil on low heat for about 15 minutes or until the pieces are soft.
2. Measure beans, oats, breadcrumbs and spices, and put in a small bowl.
3. Mash the sweet potato in a larger bowl using a fork, add the rest of the ingredients. Mash all the ingredients until you have a smooth paste. Add salt to taste. You can also add a few drops of oil, to really bring out the flavours.
4. Pour some breadcrumbs onto a plate or cutting board. Shape the paste into round, flat burgers and turn them over in the breadcrumbs. Place the burgers on a baking sheet covered with bakery paper and bake for 30 minutes.
5. While the burgers are baking, prepare salad and condiments. Slice the avocados, tomatoes and caramelized onions, set on side for adding to fill buns. Roast the burger buns just before burgers are done. Serve!
