A quick and easy meal, that is both healthy and tasty. Can be served either as a side dish, or else as a main course for that healthy summer salad. Cooking the couscous in tomato sauce instead of stock can give that extra taste.

Lamb Brand Couscous 200g
Lamb Brand Oregano 1 tsp
Vegetable or Chicken Stock 500ml
Red Pepper 1 small, minced
Spring Onions 2, minced
Red Onion 1 small, minced
Black Olives 40g, minced
Garlic 2-3 cloves, chopped
Feta Cheese 50g, crumbled
Eggs 2 large, whites only
Egg 1 large
Fresh Lemon Juice 2 tbsp
For the Dressing:
Yoghurt 125ml
Fresh Dill 2 tsp, chopped (or dry)
Fresh Lemon juice 1 tsp
Garlic 1 clove, minced
