This Quinoa Stir Fry has a delicious taste with an Asian flair. The combination of vegetables, egg, and quinoa provide a huge source of protein turing a popular side dish into a nutritional powerhouse with an even better taste.
YOU WILL NEED:
Lamb Brand 3 Colour Quinoa 200g
Lamb Brand Table Salt, to taste
Lamb Brand Ground Black Pepper, to taste
Soy Sauce 3-4 tbsp, or more to taste
Garlic Cloves 3, minced
Butter 3 tbsp
Green Onions 3, thinly sliced
Medium Carrots 2, peeled and diced
Eggs 2, whisked
Oyster Sauce 2 tsp (optional)
Small White Onion 1, diced
Frozen Peas 1/2 cup
Toasted Sesame Oil 1/2 tsp
ALL YOU HAVE TO DO IS:
1. Cook quinoa as per packet instructions, fluff with a fork and chill for at least 1 hour.
2. Use 1/2 tablespoon of butter in a large skillet, scramble the eggs and transfer to a separate plate when done.
3. Add an additional 1 tablespoon butter to the pan and heat until melted.
4. Add carrots, onion, peas and garlic, and season with a generous pinch of salt and pepper.
5. Saute for about 5 minutes or until the onion and carrots are soft. Increase heat to high, add in the remaining 1 1/2 tablespoons of butter, and stir until melted.
6. Immediately add the cooked quinoa, green onions, soy sauce and oyster sauce, and stir until combined.
7. Continue stirring for an additional 3 minutes, add in the eggs and sesame oil, stir to combine and remove from heat.
8. Serve warm or cold as desired.
