You will need:
Lamb Brand Broad Beans 500g
Lamb Brand Parsley 1tbsp
Lamb Brand Cooking Salt Coarse ¼tsp
Lamb Brand Bicarbonate of Soda pinch (optional)
Lamb Brand Ground Black Pepper to taste
Non fat Cottage Cheese 200g
Lemon Juice 2tbsp
Dried Dill Weed 1tsp
Olive Oil 1tbsp
Butter 15g
Garlic 1 clove
All you have to do:
Soak the beans for a minimum of 5 hours or overnight, changing the water from time to time. You can use the bicarbonate of soda to soften the beans and reduce cooking time. Be careful not to use too much bicarbonate of soda to avoid bringing an unpleasently soapy flavour to the the beans. Drain the water and cook the beans in fresh water. Bring to the boil and let simmer till the beans are cooked. Drain.
In a food processor, blend the beans, cottage cheese, garlic, lemon juice, parsley, dill, butter and season with salt and pepper. Add the olive oil and blend until smooth. Chill at least 1 hour in the refrigerator before serving.
