A quick and tasty bacon, lettuce and tomato pasta recipe ideal for the summer period. Can be served as a main or side dish.

You will need:
PrimeLuci Eliche Pasta, 500g
Lamb Brand Ground Black Pepper
Lamb Brand Table Salt
Lean bacon, 400g
Tomatoes, 3 (cut into chunks)
Lettuce, 1 head (quartered)
Garlic, 1 clove (minced)
Milk, 1/2 Cup
Mayonnaise, 1/2 cup
Plain Yogurt, 1/4 cup
Chives, 4 tbsp chopped
Dry Thyme, 1 tbsp
All you have to do is:
1.Cook the pasta in a large pot of salted boiling water as the label directs.
2.Drain and toss with the milk in a large bowl; set aside.
3.Meanwhile, cook the bacon in a large skillet over medium-high heat until crisp.
4.Drain on paper towels. Discard all but 3 tablespoons drippings from the pan.
5.Add the tomatoes, thyme and garlic to the pan and toss until warmed through; season with salt and pepper.
6.Crumble the bacon into bite-size pieces; set aside ¼ cup for garnish.
7.Toss the remaining bacon and the tomato mixture with the pasta.
8.Mix the mayonnaise, yoghurt and 3 tablespoons chives with the pasta until evenly combined. Season with salt and pepper.
9.Add the lettuce; toss again to coat. Garnish with the reserved bacon and the remaining 1 tablespoon chives. Serve at room temperature.
