Lentils & Maltese Sausage Soup

Yields 4-5 portions

This recipe was cooked by Chef Alessandro during Kwalita' Malta 2016.

 

You will need:

Lamb Brand Lentil Mix 400g

Lamb Brand Ground Black Pepper, to taste

Lamb Brand Salt, to taste

Maltese Sausage 2

Cauliflower 1

Marrows 1

Carrots 1

Onions 1

Vegetable Stock

Water

 

 

All you have to do is:

1. Soak the lentils in water for at least 5 hours or overnight.  Then rinse.

2. Cut the vegetables into small cubes (brunoise).

3. Put all the ingredients in a pot and cover with water.

4. Boil for 30 minutes and then simmer for 15 minutes.

5. Season with salt and pepper.

6. Serve as is or you can blend it to a finer texture.
