Broccolini with Lemon, Parmesan & Pine Nuts

With the summer season around the corner, it is time for more refreshing meals. Try out this recipe, which can be ready in less than 10 minutes, and enjoy the wonderful refreshing taste, whilst following a healthier lifestyle. This recipe can be also easily turned into a pasta dish by adding some basic white sauce or tomatoes.

Serves 2

All you need is:

Lamb Band Pine nuts, toasted 1 tbsp.

Lamb Brand Black pepper, ¼ tsp.

Lamb Brand Salt, ½ tsp.

Broccolini, cut into 10cm strips, 3 bunches

Garlic cloves, 2

Fresh Local Lemon, cut into 6mm thick slices, 1 large

Olive oil, 2 tbsp.

Parmesan cheese, grated 2 tbsp.

Vegetable stock, 100ml

Red pepper flakes, ¼ tsp.

Optional additions:

Fresh Local Mushrooms,

Sesame seeds.

All you have to do is:

  1. Heat the olive oil in a large frying pan. 
  2. Add the lemon slices and cook for 3 minutes per side. 
  3. Remove the slices from the frying pan and set aside.
  4. Add the broccolini, garlic, red pepper flakes, salt and pepper to the frying pan and cook, stirring continuously, for 2 minutes. 
  5. Add the stock and the seared lemon slices, then cover and reduce heat to medium-low. Cook for 6-8 minutes, or until the broccolini is crisp-tender, stirring occasionally. 
  6. Remove from heat and top with Parmesan cheese and pine nuts.
