Lamb Brand Minestra Mediterrania Mix 200g
Lamb Brand Barley 50g
Lamb Brand Oregano ½ tsp
Lamb Brand Marjoram ½ tsp
Lamb Brand Ground Black Pepper to taste
Lamb Brand Table Salt to taste
Vegetable Stock 1400ml
Canned Corn Kernels 425ml
Tomato Polpa 400ml
Garlic 4 cloves, minced
Extra Virgin Olive Oil 1 tbsp
Soak the legumes (Minestra Mediterrania Mix) overnight or for a minimum of 5 hours. In a large pot heat the olive oil over medium heat and cook the minced garlic for about 1 minute or until golden. Add the herbs and tomatoes and stir for a further 2 minutes.
Add vegetable stock, then add the barley and the bean mix. Bring to a boil, reduce heat and cook for about 45 minutes until beans are almost done. Add the corn, season with salt and pepper and cook for a further 15-20 minutes. Serve hot.
