You will need:
Lamb Brand Red Kidney Beans 200g
Lamb Brand Black Eye Beans 180g
Lamb Brand Coriander 1tbsp
Tomatoes 200g, diced
Red Cabbage 180g, thinly sliced
Sweet Corn 155g
Zucchini 60g, diced
White Onion 40g, finely chopped
Lime Juice 15ml
French Baguettes 6
Lettuce leaves 12
For Dijon Dressing:
Lamb Brand Garlic Powder ¼tsp
Lamb Brand Table Salt ¼tsp
Lamb Brand Ground Cumin ¼tsp
Lamb Brand Cayenne Pepper ?tsp
Olive Oil 45ml
Red Wine Vinegar 45ml
Dijon Mustard 45ml
Honey 30ml
Lime Juice 15ml
All you have to do:
Soak the beans seperately for a minimum of 5 hours or overnight, changing the water from time to time, if possible. Rinse, add to small saucepan, cover the beans with water and bring to the boil. Simmer the beans gently till tender; drain and let cool.
In a bowl, combine cabbage, tomatoes, corn, zucchini, onion, lime juice, beans and coriander and set aside.
Put all the dressing ingredients in a jar with a tight-fitting lid and shake well.
Cut baguettes in halves and fill each with some lettuce and with the bean and vegetable mixture. Finally drizzle with the Dijon dressing.
