This Zucchini and carrot salad is made using fresh ingredients, making it perfect for the hot summer season or even for an easy lunch or dinner side dish. This recipe serves 4 - 6
All you will need is:
Lamb Brand Pistachios, 50g
Lamb Brand Mint, pinch
Courgettes, preferably a mixture of green and yellow, 2
Orange / purple carrots, 2
For the mustard dressing:
Lamb Brand Salt and Pepper, pinch
Extra Virgin Olive oil, 60ml
Juice of a Lemon, 1
Wholegrain / Dijon mustard, 1 tbsp.
All you have to do is:
- Prepare the dressing by whisking all the dressing ingredients together.
- Using a peeler, peel the courgettes and carrots length wise into long thin ribbons.
- Arrange the courgette ribbons on a serving plate and scatter over the mint leaves and pistachios.
- Pour the dressing over the salad.
Note: Courgettes can be used raw or grilled.
