Simple and time saving, this salad is the healthy option for those who lead a hectic lifestyle.

You will need:
Lamb Brand Chickpeas 200g
Lamb Brand Black Beans 100g
Lamb Brand Ground Cumin 1tsp
Lamb Brand Table Salt, to taste
Lamb Brand Ground Black Pepper, to taste
Life Sun Dried Tomatoes 3, cut in half
Tuna Chunks 1 tin x 185g, drained
Anchovy Fillets 4
Black Olives 55g
Hard Boiled Eggs 2, quartered
Tomato 1 large, diced
Cucumber ¼, diced
Extra Virgin Olive Oil 2tbsp
Balsamic Vinegar 1tbsp
Dijon Mustard 1tsp
All you have to do is:
Soak the chickpeas and black beans separately for a minimum of 5 hours or overnight, changing the water from time to time if possible.
In a small pot with boiling water, cook the chickpeas and black beans separately, until beans are tender.
Drain, let cool and combine in a bowl with olives, cucumber, tomato, eggs, sun dried tomatoes and anchovy fillets.
Whisk the olive oil, vinegar and Dijon mustard to make the dressing. Season with ground cumin, salt and pepper.
Fold the tuna chunks in with the dressing mixture and mix well. Add this to the other salad ingredients.
