These Lamington cakes or as more commonly referred to among the locals as the ‘pink pastries’, are very easy to make and will be surely loved by all the family including youngsters. Simple yet so tasteful these cakes are ideal as a dessert, with a cup of tea or as a party item. You can also pack these cakes in a presentable way to give as a gift.
You will need:
Lamb Brand Sponge Mix 800g
Lamb Brand Coconut 200g
Strawberry Jelly Mix 85g
Eggs 6
Water 160ml
All you have to do is:
Sift the sponge mix in a bowl.
Mix together the eggs and 160ml of water. Sift again the sponge mix this time on the eggs and water mixture. Mix at medium speed for 12 minutes.
Turn into a greased 35cm x 25cm rectangular cake tin and bake for around 50 minutes* in a 180°C preheated oven. When ready let cool.
Prepare jelly as per packet instructions. Cut the sponge cake into 32 squares (depending on preferred size) and dip each square into liquid jelly; coating all sides. Then roll gently into fine coconut flakes to cover all sides.
You can either serve immediately or refrigerate for later.
You can enhance this dessert by decorating with some Lamb Brand Topping Mix.
*Cooking time may vary according to dish size and type of oven. For a better result bake until a skewer inserted in the middle of the cake comes out clean.
