Try our gorgeous, moist, coconut and lime cake with cream cheese and white chocolate frosting. Perfect after a meal or with some tea!
Serves 10
You will need:
For the Cake
Lamb Brand Castor Sugar 250g
Lamb Brand Plain Flour 170g
Lamb Brand Coconut 80g
Lamb Brand Vanilla Powder 1 tsp
Lamb Brand Baking Powder ½ tsp
Greek Yoghurt 200g
Butter 160g, softened
Eggs 4
Zest of 2 Limes
Juice of 1 Lime
For the frosting
Icam White Chocolate 100g, melted
Whipped Cream 300g
Cream Cheese 200g
Few Blueberries
You will need extra grated lime zest to decorate
All you have to do is:
1. Preheat oven to 200`c and grease and line 2 round cake tins.
2. In a large bowl cream together sugar and butter until light and fluffy. Add the Greek yoghurt, eggs, vanilla, lime zest, and lime juice and blend until smooth.
3. Mix together the flour, baking powder and desiccated coconut. Add to the cake mixture and mix until smooth.
4. Pour the batter into the prepared cake tins. Bake for approximately 45 minutes until an inserted toothpick comes out clean. Allow cake to cool completely on a wire rack.
5. Make the frosting by mixing together the whipped cream and cream cheese, then fold in the melted white chocolate. Chill for 15 minutes before using to sandwich together the 2 cakes.
6. Spread the remaining frosting on the top of the cake and decorate the top with the extra lime zest and blueberries.
