This is the cake you will ever want on a cool autumn Sunday evening. Full of flavors everyone craves for — sugar, cinnamon, and mixed spice.
You will need:
For the cake:
Lamb Brand Self-raising Flour 210g
Lamb Brand Castor Sugar 100g
Lamb Brand Dried Mixed Fruit 100g
Lamb Brand Mixed Spice 1tsp
Lamb Brand Cinnamon 1 tsp
Lamb Brand Table Salt, pinch
Butter 150g
Milk 125g
Marmalade Jam 3 tbsp
White Vinegar 1 tsp
Zest of an orange and lemon
To decorate:
Lamb Brand Brown Sugar 2 tbsp
Lamb Brand Icing Sugar 1 tbsp
Marmalade 3 tbsp
All you have to do is:
1. Heat oven to 160`c and line a 900g/ 2lb loaf tin with greaseproof paper.
2. Place the flour, mixed spice, castor sugar, zests, dried fruit and a pinch of salt into a large bowl.
3. Melt the butter and 2 tbsp marmalade in a saucepan, then stir in the milk.
4. Pour liquid into the dry ingredients, add the white wine vinegar and mix well.
5. Pour the cake mixture into the lined loaf tin and bake for 1 hr, or until an inserted skewer comes out clean.
6. Meanwhile, make the glaze by heating the remaining marmalade with 2 tbsp water and the icing sugar until bubbling and syrupy.
7. When the cake is cooked remove it from the oven, pour over the marmalade glaze and sprinkle over the brown sugar.
8. Leave to cool in the tin.
