Fresh and tasty cookies like the ones found in good coffee shops. Even better, try them out!
You will need:
Lamb Brand Plain Flour 160g
Lamb Brand Caster Sugar 130g plus 2 tbsp
Lamb Brand Ground Cinnamon 1/4 tsp
Lamb Brand Table Salt 1/4 tsp
Unsalted Butter 230g, at room temperature
Vanilla Essence 1 tsp
Egg 1, large
Zest of an orange
For the apricot and almond cookies
Lamb Brand Almonds 65g, toasted and coarsely chopped
Dried Apricots 65g, coarsely chopped
For the fig and walnut cookies
Lamb Brand Walnuts 65g, coarsely chopped
Dried Figs 65g, coarsely chopped
All you have to do is:
1. In a large bowl, beat the butter, sugar, vanilla, cinnamon, and salt with an electric mixer until light and fluffy, about 2 minutes.
2. Beat in the egg. Stir in the flour until just blended.
3. Divide the mixture into 2.
4. Add the figs and walnuts to one part and the apricots and almonds to the other.
5. Roll up the 2 cookie doughs into cling film and chill for an hour.
6. When ready, remove the cling film and cut into slices.
7. Place onto baking trays lined with non stick baking paper.
8. Sprinkle over the remaining caster sugar and bake the cookies in the oven at 200oC until they are golden around the edges, for about 15 minutes.
9. Transfer the cookies to a wire rack to cool completely before serving.
