Date Filled Pastry Envelopes (Imqaret)

Experience a healthier version of the Maltese traditional Imqaret prepared with wholemeal flour. Baked not fried ;)

You will need:

For the Pastry x2

Lamb Brand Aunties Mix 300g

Lamb Brand Wholemeal Flour 100g

Margarine 75g

Egg Yolk 1

Sugar 1 tbsp

Orange Blossom Water 1 tbsp

 

For the Filling:

Lamb Brand Dates 200g (cappa)

Lamb Brand Ground Cloves 1 tsp

Lamb Brand Mixed Spice ½ tsp

Anisette 1 tbsp

Lemon Rind 1, grated

All you have to do is:

1. Start pastry by mixing the sugar and margarine with an electric mixer until the mixture is pale and soft. Add the egg yolk and continue mixing until ingredients are combined.

2. Sift flours in a separate bowl, adding back the bran from the wholemeal flour.

3. Add the flours to the margarine mixture and begin to mix. Stir in the orange blossom water until combined and knead until smooth. Allow it to stand for at least 30 minutes.

4. Place the filling ingredients in a saucepan and cook over low heat, stirring the mixture occasionally. Allow it to simmer until the mixture is smooth and creamy.

5. Roll out the pastry over a floured surface. Cut strips about 15cm wide and about 25cm long. Spread a thin layer of filling down the centre of the strip. Dampen one edge of the strip, fold the pastry over and press edges together firmly.

6. Cut into four equal lengths to finish with imqaret of about 8 by 8cm.

7. Bake in a hot oven for about 30 minutes or until the pastry is golden brown. Brush the pastry top with milk for a shiny appearance. Allow to cool.
