These banana and lemon muffins are a perfectly sweet way to say thank you. Fluffy and flavoursome, you will probably end up having to make a second batch.
Makes 8
You will need:
Lamb Brand Self Raising Flour 140g
Lamb Brand Icing Sugar 4 tbsp, sifted
Lamb Brand Demerara Sugar 4 tbsp
Lamb Brand Baking Powder 2 tsp
Dried Banana Chips 85g
Sunflower Oil 50ml
Milk 5 tbsp
Bananas 3
Egg 1 beaten
Lemon 1, zested & juiced
All you have to do is:
1. Line a muffin tin with 8 paper cases.
2. Break 50g of the banana chips into small pieces then mix with the flour, baking powder, lemon zest and demerara sugar in a large bowl.
3. Whisk the milk, egg and oil together.
4. Mash the bananas with 1 tablespoon of lemon juice then fold quickly into the dry ingredients with the egg mixture.
5. Divide between the cases and bake for 20 minutes at 180oC until risen and firm.
6. Cool on a wire rack.
7. Meanwhile mix the icing sugar with 1-2 tsp lemon juice, then drizzle over the muffins before topping with remaining banana chips.
