This is a simple and superb rice pudding that uses only milk, sugar, cream, rice, butter and your choice of flavorings. Add the raisins at the end so they don’t get too mushy as the pudding cooks.
You will need:
Lamb Brand Arborio Rice 200g
Lamb Brand Castor Sugar 110g
Lamb Brand Raisins 110g
Lamb Brand Brown Sugar 55g
Lamb Brand Ground Cinnamon ½ tsp
Lamb Brand Ground Cardamom ½ tsp
Low Fat Milk 700ml
Cream 300ml
Butter 40g
Medium apples 2, peeled, cored & quartered
All you have to do is:
1. Combine milk, cream, rice and sugar in a large saucepan; stir over heat, without boiling, until sugar dissolves.
2. Bring to the boil and reduce heat. Cook, stirring for about 20 minutes or until rice is tender.
3. Meanwhile, prepare the caramelized apples*.
4. Stir spices and raisins into rice; cook, stirring for 5 minutes.
5. Serve rice pudding topped with caramelized apples.
6. *Caramelized Apples: Melt butter in a small saucepan; stir in sugar and apples. Stir over low heat for about 10 minutes or until sauce is thickened and apples are tender.
