Frosted Cinnamon Cake - LBS52

Who can resist a slice of this spicy delicious frosted cinnamon cake? Try out this refreshing dessert for afternoon tea!


You will need:

Lamb Brand Plain flour,  1 ¾ cups (sifted)

Lamb Brand self-raising flour, ¾ cups (sifted)

Butter, 175g (softened)

Castor sugar, 1 ¾ cups

Finely grated orange rind, 1 tbsp.

Eggs, 3

Bicarbonate of soda, ¼ teaspoon (sifted)

Ground cinnamon, 2 tsp.

Milk, ¾ cup

Vanilla cream frosting

Butter, 250g (softened)

Lamb Brand icing sugar, 3 cups 

Vanilla bean paste, 2 tsp.

All you have to do is:

1.Preheat oven to 180°C/160°C fan-forced. 

2.Grease a 6cm-deep, 19cm square (base) cake pan. 

3.Line base and sides with baking paper, allowing 2cm overhang on all sides.

4.Using an electric mixer, beat butter, sugar and orange rind together until light and fluffy.

5.Add eggs, 1 at a time, beating until just combined.

6.Stir in flours, bicarbonate of soda, cinnamon and milk.

7.Spread mixture into prepared pan. Bake for 50 minutes or until a skewer inserted in centre of cake comes out clean. Stand in pan for 10 minutes. Turn onto a wire rack to cool.

Make frosting: 

1.Using an electric mixer, beat butter until light and fluffy. 

2.Beat in icing sugar and vanilla until combined.

3.Using a serrated knife, cut cake in half. Place base on a plate. Spread with half the frosting. Top with cake top. 

4.Spread remaining frosting over top of cake & serve.
