You will need:
For the cake:
Lamb Brand Self-Raising Flour 600g
Lamb Brand Castor Sugar 550g
Lamb Brand Bicarbonate of Soda ½tsp
Valor Cocoa Powder 70g
Butter 370g, cubed
Water 160ml
Apples 3 medium (about 450g), peeled, chopped and cored
For decoration:
Lamb Brand Icing Sugar 320g
Lamb Brand Almonds Flakes 80g
Icam Dark Melting Chocolate 150g, chopped
Vegetable Oil 1tsp
Water 60ml
All you have to do is:
For cake:
Sift the flour and then mix with the rest of the ingredients in a food processor, except for the apples. After all the ingredients have been combined add the chopped apples and mix well. Pour the mixture into a 26cm round cake pan. Place in the oven with a temperature of 175ºC for 75 minutes. When ready take out of the oven and let cool.
For decoration:
Combine 90g of the chocolate, oil and water in a medium saucepan, stir over low heat until chocolate is melted. Melt the remaining 60g of chocolate using the bain-marie method. Once melted use a piping bag to create designs on a baking sheet which once set will be used for decorations.
In a larger bowl prepare the sifted icing sugar and add the melted chocolate and oil mixture, mix well until a smooth spreading consistency is achieved.
Spread the chocolate icing mixture all over the cake and decorate by putting almond flakes on the side and top of the cake. By now the chocolate designs should have been set and can easily be peeled from the baking sheet and placed over the cake to decorate. Serve and enjoy.
