This fruit bread recipe is simple to make and tastes delicious. Try it out!
You will need:
Lamb Brand Plain Flour 125g
Lamb Brand Mixed Cherries 125g
Lamb Brand Castor Sugar 110g
Lamb Brand Almond Flakes 60g
Lamb Brand Konfettura 60g
Lamb Brand Ground Ginger 60g
Rayner Almond Essence 1tsp
Egg Whites 3
All you have to do is:
1. Beat egg whites and almond essence until soft peaks form.
2. Add castor sugar, a spoonful at a time, beating well after each addition.
3. Fold in flour, almonds, cherries and ginger. Spoon mixture into a lightly greased and lined 25cm x 8cm loaf pan and bake at 180C for 35-40 minutes or until firm.
4. Turn out onto a wire rack to cool completely. Wrap in aluminum foil and set aside for 1-2 days.
5. Using a very sharp serrated knife, cut bread into wafer thin slices. Place slices onto an oven tray lined with baking paper and bake at 150C for 35 minutes or until dry and crisp.
6. Remove from oven and cool on wire rack.
