This elegant well blended chocolate and cherry roll makes a wonderful moist dessert that everyone will want to devour more.

You will need:
Lamb Brand Plain flour, ¾ cup
Lamb Brand baking powder, 1 tsp.
Lamb Brand table salt, ½ tsp.
Lamb Brand Icing Sugar for Dusting
Lamb Brand Castor Sugar, 3/4 Cup
Eggs, 4
For filling
Lamb Brand Topping Mix, 200g
Chocolate syrup, 3 tbsp.
Lamb Brand mixed cherries, 3 cups

All you have to do is:
1.Preheat oven to 200°C.
2.Line a baking pan with waxed paper; coat the paper with cooking spray and set aside.
3.In a large bowl, beat eggs for 3 minutes.
4.Gradually beat in sugar; beat 2 minutes or until thick and lemon-coloured.
5.Combine flour and salt; gradually add to egg mixture and mix well.
6.Spread evenly into prepared pan. Bake 8-10 minutes or until cake springs back when lightly touched. Cool for 5 minutes.
7.Invert onto a kitchen towel dusted with confectioners' sugar. Gently peel off waxed paper.
8.Roll up cake in the towel jelly-roll style, starting with a short side. Cool completely on a wire rack.
9.For filling, combine whipped topping and chocolate syrup; fold in cherries. Unroll cake; spread filling evenly over cake to within 1/2 in. of edges. Roll up again. Place seam side down on a serving platter.
10.Drizzle with chocolate syrup and garnish with cherries if desired. Refrigerate until serving.
