Almond Nougat

Get into the spirit and bake delicious almond nougat. Keep them for your guests or package them up as food gifts that everyone will love.

You will need:

Lamb Brand Blanched Almonds 240g, toasted

Lamb Brand Castor Sugar 220g

Lamb Brand Rice Paper 4 sheets

Honey 180ml

Egg White 1

Rose Water 1 tbsp

All you have to do is:

1. Cover the base of a 23cm square slab pan with 2 sheets of rice paper.

2. Combine sugar, honey and rose water in a heavy-based small pan, stir over heat, without boiling, until sugar is dissolved.

3. Bring to boil, simmer, uncovered, about 4 minutes or until a teaspoon of mixture dropped into a glass of cold water forms a fine thread which can be snapped with fingers.  Remove from heat.

4. Beat egg white in a small bowl with an electric mixer until firm peaks form. With mixer operating, gradually pour in the hot syrup in thin stream, continue beating about 1 minute, or until mixture is thick.

5. Fold in almonds, spread into prepared pan.

6. Cover with remaining rice paper and let cool.

7. Cut when cold.
