
These all-butter shortbread biscuits are simple yet luxurious and delicious.

All you need is:
 
Lamb Brand Plain Flour 225g
Lamb Brand Castor Sugar 110g
Lamb Brand Corn Flour 110g
Butter Substitute 225g
Vanilla Essence 1 tsp 
 
For Dusting:
Lamb Brand Castor Sugar 
Lamb Brand Cinnamon
All you have to do is:
1. Start by lining baking trays with baking parchment and put aside. 
2. Preheat oven to 170°C. 
3. Place the butter substitute, sugar and vanilla essence into a mixing bowl and cream until light and fluffy. 
4. Sieve in the plain flour and corn flour then carefully mix to a smooth paste. 
5. Wrap the pastry in cling film and refrigerate for 1 hour before rolling. 
6. Remove from the fridge and roll out. Cut the shortbread into discs using pastry cutters. 
7. Place on to prepared trays and bake at 170°C for approximately 20 minutes, or until just turning golden brown at the edges. 
8. Remove and sprinkle with caster sugar and a little cinnamon if desired. Allow to cool before serving.
