Carrot Cupcakes are moist and flavourful with grated carrots and mixed spice! Top them up with a delicious chocolate frosting.
You will need:
For the cupcakes
Lamb Brand Brown Sugar 175g
Lamb Brand Self-Raising Flour 100g
Lamb Brand Wholemeal Flour 100g
Lamb Brand Mixed Spice 2 tsp
Lamb Brand Baking Powder 1 tsp
Carrots 200g, grated
Margarine 150g
Eggs 2, beaten
Zest of an orange
For the white chocolate frosting
Lamb Brand Icing Sugar 175g
Unsalted Butter 100g
White Chocolate 100g, melted and cooled
Finely grated zest of an orange
For the dark chocolate frosting
Lamb Brand Icing Sugar 175g
Unsalted Butter 100g
Dark Chocolate 100g, melted and cooled
Cocoa Powder 1 heaped tbsp
Finely grated zest of an orange
You will also need marzipan figures, food colourings and Lamb Brand Coconut to decorate.
All you have to do is:
1. Heat oven to 180`c and line a 12-hole muffin tin with cases.
2. In a large mixing bowl, mix the sugar, flours, baking powder, mixed spice and orange zest and put aside.
3. Beat together the margarine and brown sugar in a large bowl till light and pale.
4. Beat in the eggs to incorporate. Fold in the grated carrots, followed by the flour mixture.
5. Divide the mixture between cases and bake for 20-22 minutes until a skewer poked in comes out clean.
6. Cool on a wire rack while you make the chocolate butter icing.
7. Meanwhile, prepare the frosting by beating together the butter, icing sugar and grated orange zest.
8. Finally, beat in the melted chocolate till well combined.
9. Pipe the frosting onto the cooled cup cakes, decorate with the edible decorations and serve.
